Lua 5.3.x

Hi there.

I'm wondering if LOVE will, eventually, be upgraded in integrating a newer releases of Lua.

Is LuaJIT lack of support for Lua 5.3.x the only reason?

I believe love has experimental support for Lua 5.3. Love itself ships with luajit by default but you can use other Lua versions with love. Although you probably wouldn't want to. Luajit way too fast to downgrade to regular Lua.
