Note that stencils tend to have jaggy edges causes by the lack of substeps in stencils and no post-antialiasing in the result, you can avoid these with a shader or by drawing at a higher resolution and then scaling down with nearest filter, doesn't need to be twice or so, just a little bigger will do.
But yes, this is totally doable with stencils, just requires a few more draw calls for each cut
