Interesting project.
However, it doesn't seem like a real simulation of a liquid.
Two droplets have to touch before they coalesce. In your simulation, the droplets attract when they get close together.
Also, when there are only three dots in the center of a small droplet, the droplet never becomes circular – remains elliptical.
Other than that, great job.

That's probably due to the render technic that's being used, once I implement particle-to-solid collision I'll add a metaball like render that should represent coalescence nicely.

That's because of the particle radius, if you decrease it particle groups will look rounder but I think that droplets will only become round when they have at least four particles in the center.
