I don't really see this in the love audio API, and admittedly I don't understand programatic audio. Is there an easy way to slooooow down and speed up background music in game? Or should I just go start learning about bits and channels and samples?

https://www.love2d.org/wiki/Source:setPitch can make sound play slower, and it will also make the tones "darker". This may or may not be what you want. If you don't want it that way I don't think there's an easy way to do that.

It does? Have to try it. There are ways to do pitch change while keeping the speed and vice versa.
arrogant.gamer, depending on what you want you could maybe pre-process your audio files or do on-the-fly synthesis. Bt either way, it's a pitty that löve isn't more powerful wrt. audio.
