I use whatever the situation calls for. Whatever the team's method is, if I work in a team. Whatever gets the job done when game-jamming. Whatever teaches me the most when learning. Whatever is most efficient when doing something that needs to be fast. Whatever is most stable and maintanable when building something that needs to stay up for a long time.

My programming is usually pretty decent, but eventually it ends up a bit messy and resource-intensive, so then I take the time to optimize it and make it more logical and improve readability.

When writing new code, I usually know beforehand what I'm trying to code, and I figure out the how as I go.

I think everyone sucks in the early days. I also sucked but day by day I see myself getting better. sometimes I find myself asking for an answer on the support thread then minutes later I figure it out myself.
Just like all things, no one is born perfect those who seem like they are went through a lot before hand (that you don't know) and are probably lying if they say they never sucked at one point.
